I prefer knitting purl to stockinette. So I always like the "return-row" better.

So if you were knitting a hat in the round that was supposed to be stockinette, would you knit it inside out?

Nope, I have knitted a giant beret in stockinette, it was no problem. I think it's easier in a thinner yarn. Th eberet was kni ton 2,5 mm needles and my daughter's current projeec that I was knitting a little on is knit on 5 mm needles. And if I had had 7 mm I would have used those.
